 Who is Cooking Healthy for Radiant Health?

Me

I am cooking healthy for radiant health. I started making changes to my diet about six months ago and have seen some amazing results. Not only do I feel better, but I also look better. I have more energy and my skin looks healthier. My clothes fit better, too! What's great is that these recipes are delicious. My family loves them and we're all feeling great. These recipes are easy to make, too. There's nothing complicated or time-consuming about any of them! 

I don't know how long this will last or if it will last at all, but I'm going to enjoy every minute of it while it does. And I hope you'll enjoy it with me. Here are a few of the dishes that you can find on the blog: 

Fajita Chicken Stir Fry 

Simple Potato Soup 

Baked Fish with Spinach and Mushrooms 

Beef Teriyaki with Pineapple Salsa. You could also use cilantro, onion, and tomatoes in your salsa to give it a fresh flavor. It's really good and has so much color. I love dipping tortilla chips into it - yum! It goes perfectly with fish tacos too - like these ones from The Modern Dad Cooks . Give them a try, they're easy to make. He uses tilapia for his recipe because he finds that it cooks quickly and is less expensive than other types of fish (not sure why), but you can substitute whatever type of fish you want.

If you want something quick and easy - just one dish - then try Spicy Coconut Chicken Wings from Rachel over at Wholefully . They take just 20 minutes from start to finish! She cuts up whole chicken wings and coats them in a simple spice mix made from salt, garlic powder, black pepper, paprika, cayenne pepper, red pepper flakes and coconut oil. She bakes them for 15 minutes and then finishes them off by tossing with maple syrup until caramelized. Rachel likes to serve hers alongside some celery sticks as dippers. But she says her kids eat theirs straight out of the pan! Sounds like my kind of meal.

As far as desserts go, sometimes I just crave chocolate so bad that I need it in my mouth right now. So what do I do? Whip up some Dark Chocolate Cake with Walnuts, obviously!

It's decadent and perfect for a dinner party dessert or even an afternoon snack. Just whisk together cocoa powder, sugar, vanilla extract, melted butter and eggs until smooth and pour into a prepared cake pan. Top with walnuts and bake until set in the center - 30 to 35 minutes depending on your oven temperature - then let cool before serving warm or chilled; whichever you prefer! With all these recipes, you're sure to find something that suits your needs. Whether you're a busy mom, a newlywed, or someone who's trying to keep up with the latest celebrity diets, I've got you covered. All the recipes are gluten free and most of them are dairy free too. Taylor, our 3 year old son

Cooking healthy meals is something that is very important to our family. We make sure to cook with fresh, organic ingredients and avoid processed foods as much as possible. Taylor is our 3 year old son and he loves helping out in the kitchen. He is always so excited to try new foods and help cook dinner. It makes us happy to see him taking an interest in healthy eating at such a young age! When we have time after work or school, I like to ask my husband what he would like for dinner. I'll then go grocery shopping together and find all of the ingredients we need. Afterwards, my husband will chop up vegetables while I make homemade pasta or we might grill some chicken or tofu skewers if it's warm outside. Then when it's time to eat we can sit down together as a family and enjoy whatever we've made together. All of these things really help us feel closer as a family and know that we are making healthy choices. As parents, it feels great knowing we are doing our best to raise happy kids who are going to grow up into adults who love their bodies and appreciate their health. Cooking healthy meals is something that is very important to our family. We make sure to cook with fresh, organic ingredients and avoid processed foods as much as possible. Cooking from scratch also helps you learn about how your food is prepared which can be really interesting for kids! They get to watch everything happen right before their eyes. For example, last week we made the Spaghetti & Meatballs Recipe from our blog (linked below). First I boiled water and put it on low heat to simmer with onions, carrots, celery, garlic and thyme until they were tender. Then Taylor got to pick his own tomatoes from the garden and peeled them by hand before squeezing them into a bowl with salt. My husband added ground beef and seasoned it with salt pepper, oregano and basil before browning it in olive oil on medium-high heat for 5 minutes on each side. Next he added canned tomato sauce, tomato paste, red wine vinegar and black pepper to the pan. While the sauce was cooking down I prepped the noodles according to package instructions and cooked them al dente with butter, Parmesan cheese and parsley. Once done my husband strained off any extra liquid before tossing everything together with freshly grated Parmesan cheese on top. We loved this recipe because it had just enough meat for us without being too heavy but still full of flavor from all of those veggies! The leftovers tasted just as good too so we were able to bring leftovers for lunch throughout the week too! A few days later we made Roasted Cauliflower and Chickpea Tacos. To start, we roasted the cauliflower with some cumin, paprika, salt and lemon juice. Meanwhile, I mashed up chickpeas with avocado and lime juice. This turned out to be a delicious substitute for mayonnaise as it helped to keep the tacos moist. Together we assembled lettuce wraps with the roasted cauliflower, hummus mixture and topped them with shredded cabbage and thinly sliced green onion. These tacos are perfect for meal prep since they store well in tupperware containers for the whole week! We especially loved the leftovers on day three as they were really crispy and flavorful from the leftover spices. We make sure to include a variety of foods in our diet so that we can get all of the nutrients we need for our body. Eating healthy doesn't mean sacrificing taste or spending a lot of time in the kitchen either! Understanding that fact and focusing on keeping up with a healthy lifestyle is important. And as long as you're trying - you're succeeding! Cooking healthy meals for our family is something that is very important to us. We want to make sure that our daughter grows up eating healthy food and gets all the nutrients she needs. It’s always a good idea to start when they are young, because it becomes second nature as they grow older. The challenge, of course, is getting her interested in what we are cooking - which can be difficult at times! I think my favorite thing about this blog post was how great of a job Julia did with the dishes! She had such an enthusiastic spirit in the kitchen and was excitedly showing me everything she had prepared on her own! We hope you enjoy these recipes as much as we do!
